Painting question

I realized I cannot paint certain parts of the car with the car together, so  I came up with this plan and I need to know if it is a good plan.

Note: First time painting a car, so be gentle. LOL

1) Paint engine bay, inside trunk, under trunk lid, under hood and fenders and door jambs and front and rear valance

2) Assemble fenders, hood and trunklid (doors will stay assembled)

3) Paint outside of car covering door jambs, opening between fender and door, fender and hood.

4) paint bumpers and install

Couple of questions:

What kind of paint - single stage or base coat/clear coat.  This may or may not make a diff depending on who you talk to.
What color paint - metallic and semi metallic make things harder than non metallic.

Single stage and not metallic. It is Restoration Shop Paint Acrylic Urethane.

If it's single stage non metallic you can paint it unassembled in pieces. LEON.
