Can someone please help me with how to wire in a manual override switch for my electric fan.  I have a temp switch switch to automatically turn on the fans.  I just wanted to have a manual override switch wired in, just in case.

To turn them on or off?  On would simply be a hot trigger for the relay.  Run a hot lead from the fusebox to a fuse to a switch to the input on the relay.

......................yes that will work. I use the rear defogger switch for my fan. That way I do not have to worry about mountng another switch.
