Are there any companies out there that make a 5 or 6 speed transmission that will hook up to a 340? Are there existing transmissions of the sort that will hook to a 340?

Yup.  Wish I had of went with them rather then the gear vendors.  Wait a minute, can you still have a centre console with a manual transmission?

If you'd rather have a 6-speed, Quicktime (Lakewood) makes adapter bellhousings to mate the SB Mopar to the T-56 (P/N RM-6076) or the Viper 6-speed (P/N RM-8074). It's not a kit so you'll have to chase the parts.
Pardon me but my karma just ran over your dogma.

I have a Tremec 5-speed in my 68...     still have a center console...    did the parts myself - refused to buy a Keisler kit.
