what's or why the diff between both ways to spell John... or Jhon ?

I have seen Jon in English.  I think it is Jonathan but don't know the difference. 
Who in their right mind would say

"The science should not stand in the way of this."? 

Science is just observation and hypothesis.  Policy stands in the way.........

Or maybe it protects us. 

I suppose it depends on the specific case.....

I would guess that both are correct and it probably up to the person on how they want their name spelled.  John and Jon sound the same to me and both are short for Jonathan.  Even the spelling of Jonathan has many variations.

Over here Margaret  is commonly shortened to Peggy.....absolutely no idea why! Both Margarets I know are called Peggy by everyone!
